Brewing

Our 100,000 sq. ft. brewery is equipped with a state-of-the-art 170-barrel brewhouse, including a 25° Plato capacity mash tun and a 170-barrel brew kettle, with the capability to produce over 150,000 barrels annually and plans for future expansion requiring minimal investment. Additionally, the facility also features a dedicated 1,500-barrel sour space. Lastly, for any development needs, we operate a 10-barrel pilot brewhouse, allowing for precise recipe adjustments prior to full-scale production.

Fermentation

Our facility boasts over 9,000 barrels of fermentation space, with tank sizes ranging from 85 to 680 barrels, supporting a total annual capacity of 235,000 barrels. We also have 2,400 barrels of bright beer tank (BBT) space, along with an in-house yeast farm featuring two propagators and three harvest tanks. To ensure quality and efficiency, we utilize an Alfa Laval separator, a flash pasteurizer, and a high-polish filtration skid.

Packaging

Our facility features a state-of-the-art KHS volumetric canning line capable of filling 12oz, 16oz, or 19.2oz cans, including nitro products with or without a widget. Additionally, we offer a keg washer and filler, as well as 32,000 square feet of warehouse space, which includes cold storage for short-term storage of finished products prior to shipping. For added flexibility, we also provide the option to tanker finished products off-site upon request.

Quality Lab

We are equipped with a state-of-the-art laboratory and a comprehensive quality assurance program. Our capabilities include a brewery-wide HACCP system, GMP adherence, and a robust plant sanitation program. Analytical analysis is conducted using advanced tools such as the Anton Paar Alcolyzer Beer ME, DMA 4500M-EC, and HazeQC, as well as diacetyl detection through distillation or Shimadzu GC. For packaging, we utilize the Orbisphere 6110 Package Analyzer, Anton Paar CBox, and Seammetal Seam Evaluation. Microbiological analysis combines traditional aerobic and anaerobic plating methods with Midwest Microbio PCR and enrichment protocols. Sensory analysis is conducted daily using a trained sensory panel and DraughtLab Pro, complemented by monthly off-flavor training for all panelists. We also offer contract flavor matching and specification setting services to meet your product needs.
